Pears are one of fall’s best cocktail flavors, and in this recipe, a spiced pear shrub complements the oaky character of reposado tequila.
1½ oz. reposado tequila
1 oz. Cardamaro
¾ oz. pear shrub
½ oz. fresh lemon juice
Tools: shaker, strainer
Glass: Collins
Garnish: rosemary sprig
Combine all the ingredients in a shaker, add ice, shake, and strain over fresh ice. Garnish.
Pear Shrub
1 cup chopped pears
1½ cups Turbinado sugar
5 cinnamon sticks, broken
⅛ cup ground cardamom
½ cup sherry vinegar
½ cup white vinegar
Combine the chopped pears, cinnamon, cardamom and sugar in a container. Let sit for 2 days. Add the vinegar; stir vigorously, strain and quart. Makes ½ quart.
